Method

Chicken Rendang Burger

Step 01

Heat up the vegetable oil in a wok, sauté the blended ingredients (rendang paste) over low heat until aromatic.

Step 02

Add the chicken and lemongrass, stir to combine well with the spices. Add the coconut milk, and simmer on medium heat, stirring frequently until the chicken is almost cooked.

Step 03

Add the kaffir lime leaves, turmeric leaf, stir to blend well with the chicken and slowly simmer for 30 minutes or until the chicken is tender and the liquid has dried up. Add sugar and salt to taste.

Step 04

Stack chicken rendang, cheese, jalapeño, and more rocket on top of bottom buns. Close sandwiches with top buns.

Remember to slice the leaves thinly for the aromatic smell.

Chicken thigh fillets, cut into (±3cm) pieces

Soy sauce

Sushi seasoning

Finely grated fresh ginger

Chicken Karaage

Step 01

Combine soy sauce, sushi seasoning and ginger in a dish. Add the chicken and toss to coat. Cover with plastic wrap and place in the fridge for an hour to marinate.
Step 02
Drain the chicken from the marinade and pat dry.
Step 03
Add oil to a large saucepan to reach a depth of 5cm. Heat to 170°C over medium-high heat.
Step 04
Place combined flour on a plate. Add one-third of the chicken and toss to coat. Shake off any excess.
Step 05
Fry the chicken, turning halfway through cooking for 4-5 minutes or until cooked through.
Step 06
Use tongs to transfer to a plate lined with paper towel.
Step 07
Repeat in 2 more batches with the remaining chicken and flour mixture, reheating the oil between batches.
Step 08
Transfer to a serving platter.

Fun fact: ‘Karaage’ (means Tang-fried) is a reference to Chinese Tang dynasty, where the method of preparing chicken was probably inspired by the Chinese.

Jerk Chicken

Step 01

Toast and grind Group A in a skillet.
Step 02
Puree Group B in a blender.
Step 03
Combine Group A, Group B and Group C in a bowl to make the jerk marinade.
Step 04
Preheat oven to 200˚C.
Step 05
Score chicken and season it with salt and pepper.
Step 06
Spoon desired amount of jerk marinade onto chicken and rub the extra into scores.
Step 07
Refrigerate for 2 hours or for better tasting chicken overnight.
Step 08
Bake for 35-45 minutes in oven, remove and finish it on the grill for crispier layer of skin.

Tips: For a more authentic jerk experience, add some wood chips to your barbecue.

Chicken Panini

Step 01

In a large pan, heat 2 tablespoons olive oil over medium heat.
Step 02
Season the chicken with salt and pepper. Add to the pan and cook, turning occasionally until golden.
Step 03
After 6-8 minutes, transfer to a plate. Let it cool before slicing the chicken meat.
Step 04
In the same pan, heat 1 ½ tablespoons olive oil over medium heat.
Step 05
Add onions, seasoning with salt and pepper. Cook until golden for 7 minutes.
Step 06
Divide the chicken mixture among the rolls.
Step 07
Using a sandwich maker press, cook the sandwiches for a couple of minutes until grill lines appear.

In a large bowl, juice lemon and add 1 ½ tablespoons olive oil.

Add in the romaine lettuce, cucumber and toss. Season with salt and pepper and serve with the sandwich.

Step 01

Grind the shallots, cumin, dried chilli, turmeric, garlic, and ginger together.

Heat oil in a deep pan and put in mustard seeds.

When seeds crackle, add the sliced onions and fry until it turns golden.

Add ground spices and fry for a few minutes.
Step 05
Add chicken and curry leaves and stir well, making sure the chicken is well coated with the spices.

Reduce heat and simmer until chicken is tender.

Step 01

Soak noodles in water for 30 minutes, set aside in a colander.

Rinse the bean sprouts and scallion.

Coat chicken breast with corn starch.

Mix all the sauces together and set aside.

Pound the shallots and dried shrimps together in a mortar.

Heat wok, add in the chicken and stir-fry it. Add in the pounded ingredients.

Preheat oven to 200°C, line baking trays with baking paper.

Mix all minced meat, garlic, carrot, breadcrumbs, parsley, nutmeg and seasonings.

Beat 1 egg and add to mince mix, divide to 6 portions.

Cut pastry sheets in half, roll mince portion for about 20-25cm long.

Place down the sides, beat remaining eggs and brush the edges.
