Method
Boeuf Bourguignon

Step 01

Preheat oven to 180°C.
Step 02
Heat olive oil in a large pot, add the beef breakfast and cook over medium heat for 10 minutes, or until the beef is browned. Remove the beef onto a large plate.
Step 03
Pat dry the beef cubes with paper towels and sprinkle salt and pepper. Sear the beef in batches over 3-5 minutes. Remove all the seared cubes onto the same plate as the beef breakfast.
Step 04
Toss carrots and onions, with 1 tablespoon of salt and 2 teaspoons of pepper, cooking for 15 minutes, add garlic and cook for 1 more minute.
Step 05
Add Cognac and ignite with a match to burn off the alcohol. Put the meat and beef breakfast into the pot with the juices.
Step 06
Add a bottle of wine to cover the meat, together with the tomato paste and thyme. Bring to a simmer, cover the pot and place it in the oven for about 1 ¼ hours or till meat and vegetables are tender.
Step 07
Combine 2 tablespoons of butter and the flour with fork and stir into the stew.
Step 08
Add the whole onions, sauté the mushrooms in 2 tablespoons of butter for 10 minutes and add it to the stew.
Step 09
Bring stew to a boil on top of stove, and lower heat and simmer for another 15 minutes.
Step 10
Season to taste.

To serve with this hearty bourguignon dish, rub each slice of bread with cut clove of garlic and toast them. Sprinkle stew with parsley. Bon Appetit!

Jerk Chicken

Step 01

Toast and grind Group A in a skillet.
Step 02
Puree Group B in a blender.
Step 03
Combine Group A, Group B and Group C in a bowl to make the jerk marinade.
Step 04
Preheat oven to 200˚C.
Step 05
Score chicken and season it with salt and pepper.
Step 06
Spoon desired amount of jerk marinade onto chicken and rub the extra into scores.
Step 07
Refrigerate for 2 hours or for better tasting chicken overnight.
Step 08
Bake for 35-45 minutes in oven, remove and finish it on the grill for crispier layer of skin.

Tips: For a more authentic jerk experience, add some wood chips to your barbecue.

Mixed Seafood Paella

Mixed Seafood Paella
Seafood broth

Method
Mixed Seafood Paella

Step 01

Heat the broth in a large pot. Stir in saffron.
Step 02
Pat fish and prawns with paper towels. Sprinkle salt and let it sit for 10 minutes.
Step 03
In a mortar, mash parsley, garlic, thyme and some salt into a paste. Stir in paprika; add water to form a paste.
Step 04
Heat 6 tablespoons of oil in 15-inch paella pan over medium high heat, before adding the fish. Cook for 1-2 minutes, but do not fully cook it. Remove it to a warm platter.
Step 05
Add remaining 2 tablespoons oil, onion, scallions and bell pepper to paella pan and cook until the vegetables are softened.
Step 06
Raise the heat, add tomatoes and cook until sauce-like, for about 2-5 minutes.
Step 07
Pour hot broth in and bring it to a boil, sprinkle the rice evenly across the pan.
Step 08
Boil it for about 3-5 minutes, stirring rice and rotating pan.
Step 09
Add reserved fish (not prawns).
Step 10
Stir in parsley and taste for salt.
Step 11
Lower the heat and let it simmer until rice is not soupy. Let it cook for another 10 minutes (add liquid if necessary).
Step 12
Arrange prawns, clams, and mussels on the rice, placing edges of mussel and clamshells so it opens facing
Step 13
Cook it uncovered for 20 minutes, until rice is almost done.
Step 14
Remove pan from heat and cover with foil, letting it rest for another 10 minutes.
Step 15
Serve with lemon wedges, and aioli (if available).

Chicken Panini

Step 01

In a large pan, heat 2 tablespoons olive oil over medium heat.
Step 02
Season the chicken with salt and pepper. Add to the pan and cook, turning occasionally until golden.
Step 03
After 6-8 minutes, transfer to a plate. Let it cool before slicing the chicken meat.
Step 04
In the same pan, heat 1 ½ tablespoons olive oil over medium heat.
Step 05
Add onions, seasoning with salt and pepper. Cook until golden for 7 minutes.
Step 06
Divide the chicken mixture among the rolls.
Step 07
Using a sandwich maker press, cook the sandwiches for a couple of minutes until grill lines appear.

In a large bowl, juice lemon and add 1 ½ tablespoons olive oil.

Add in the romaine lettuce, cucumber and toss. Season with salt and pepper and serve with the sandwich.

Method
Slow Cooker Meatballs - Sauce - Meatballs

Step 01

Turn your crock pot on to its lowest setting and combine the hot sauce and butter until all the butter is melted.
Step 02
In a large bowl, combine the celery, onion, garlic, parsley, salt, black pepper, ground beef, blue cheese, eggs, and most of the bread crumbs. Work with your hands to evenly combine all the ingredients.
Step 03
Pinch off a golf ball’s worth of the mixture and roll in your hands to form a ball. If the mixture is too soft to hold its shape, add more breadcrumbs.
Step 04
Once all the meatballs are formed, arrange them in the bottom of your crock pot, turning each one to evenly coat it with the buffalo sauce. Layer the meatballs as necessary, beginning around the perimeter of the pot.
Step 05
Turn your crock pot to high, and cook 1 1/2 - 2 hours.
Step 06
Serve with ranch, celery, and a sprinkling of parsley.

Steamed Crucian Carp

Step 01

Prepare raw ingredients and clean the carp.

Score the flesh of the carp, add salt, cooking wine and leave it for 10 minutes.

Slice the onion, ginger and spring onions.

Place sliced ginger and onions underneath the carp on a plate. Steam it for 15 minutes.
Step 05
Open the lid, add the soy sauce and place some ginger on top of the carp. Close the lid and cook the fish for another 5-7 minutes or until the flesh is flaky.

Place 4-5 tablespoons peanut oil in a hot pan, remove steamed fish from steamer and pour the hot peanut oil on top of the carp.
