Penang Rojak with Squid

Step 01

Fry tofu on a non-stick pan on all sides to crisp it up. Remove and slice thinly when cool enough to handle.

Step 02

Combine rojak sauce ingredients in a small bowl. Mix thoroughly with a spoon.

Step 03

Pour sauce over fruits and vegetables.

Step 04

In a separate bowl, combine olive oil, lemon juice, salt, and pepper.

Step 05

Add squid bodies and tentacles, tossing to coat.

Step 06

Grill over high heat, turning once, until just opaque throughout - about 1 to 2 minutes.

Step 07

Sprinkle with parsley and serve with Rojak.

Step 08

Sprinkle some chopped peanuts and sesame seeds.

Make sure to clean the squid!

Oh Chien Omelette with Cheese

Step 01

Whisk eggs well in a bowl.

Step 02

Heat a pan with oil, when it is just hot enough add the oysters & salt.

Step 03

Add chili flakes & mix well. Spread the mixture.

Step 04

Reduce the flame to medium and pour the eggs.

Step 05

Allow to cook until the base is set. Flip it and cook.

Step 06

Fry it to and fro on both the sides until fully cooked. Then add the grated cheese as desired.

Step 07

Fold it half way and cook on a low heat until the cheese melts.

Step 08

Serve cheese omelette warm.

Char Kuey Teow with Tiger Prawns:

Step 01

Mix soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar and pepper evenly.

Step 02

Heat wok over high heat, add oil into wok, minced garlic and chili paste. Stir-fry until fragrant.

Step 03

Add noodles to wok and quickly stir-fry them while adding few spoonful’s of sauce at a time. Then, add an egg to the noodles.

Step 04

Add tiger prawns for about 30 seconds.

Step 05

Finally, add chopped Chinese chives and bean sprouts. Continue stir-frying noodles until vegetables are cooked.

Make sure to clean the prawns!

Mixed Seafood Paella

Step 01

Heat the broth in a large pot. Stir in saffron.
Step 02
Pat fish and prawns with paper towels. Sprinkle salt and let it sit for 10 minutes.
Step 03
In a mortar, mash parsley, garlic, thyme and some salt into a paste. Stir in paprika; add water to form a paste.
Step 04
Heat 6 tablespoons of oil in 15-inch paella pan over medium high heat, before adding the fish. Cook for 1-2 minutes, but do not fully cook it. Remove it to a warm platter.
Step 05
Add remaining 2 tablespoons oil, onion, scallions and bell pepper to paella pan and cook until the vegetables are softened.
Step 06
Raise the heat, add tomatoes and cook until sauce-like, for about 2-5 minutes.
Step 07
Pour hot broth in and bring it to a boil, sprinkle the rice evenly across the pan.
Step 08
Boil it for about 3-5 minutes, stirring rice and rotating pan.
Step 09
Add reserved fish (not prawns).
Step 10
Stir in parsley and taste for salt.
Step 11
Lower the heat and let it simmer until rice is not soupy. Let it cook for another 10 minutes (add liquid if necessary).
Step 12
Arrange prawns, clams, and mussels on the rice, placing edges of mussel and clamshells so it opens facing
Step 13
Cook it uncovered for 20 minutes, until rice is almost done.
Step 14
Remove pan from heat and cover with foil, letting it rest for another 10 minutes.
Step 15
Serve with lemon wedges, and aioli (if available).

Step 01

Prepare raw ingredients and clean the carp.
Step 02
Score the flesh of the carp, add salt, cooking wine and leave it for 10 minutes.

Slice the onion, ginger and spring onions.
Step 04
Place sliced ginger and onions underneath the carp on a plate. Steam it for 15 minutes.
Step 05
Open the lid, add the soy sauce and place some ginger on top of the carp. Close the lid and cook the fish for another 5-7 minutes or until the flesh is flaky.
Step 06
Place 4-5 tablespoons peanut oil in a hot pan, remove steamed fish from steamer and pour the hot peanut oil on top of the carp.

Garnish it with spring onions and sliced red chillies.

Step 01

Combine the oil, garlic, basil, lemon juice and zest in a bowl, then season.

Brush the marinade over the seafood.

Heat a barbecue hotplate to medium-high.

Cook the seafood making sure all the clams and mussels are open and the meat for prawns and scallops are opaque.

Place all onto a platter and serve it with parsley, avocado and seafood sauces.

For the avocado cream: Blitz all the ingredients until smooth. Season with salt and pepper to taste.

Repeat process with the seafood sauce, by blitzing and seasoning before serving.

Mussels in White Sauce

Step 01

Place mussels in a bowl of salted water (1 tablespoon of salt for every 4 cups of water) for 10-15 minutes.
Step 02
Put ½ cup of dry white wine in a large pot, and add mussels. Cover and bring to a boil.
Step 03
Let the wine reduce in 5-7 minutes. (Don’t overcook!)
Step 04
Remove the shells from the pot, but don’t discard the water.
Step 05
Let the water in the pot settle for a minute before gently pouring out the cooking water in a measuring cup. Leave the grit in the pot to discard later. Use a sieve to remove the grit.
Step 06
Melt butter in a medium sized pan, add shallots and cook until translucent.
Step 07
Add garlic and cook for a minute.
Step 08
Add a teaspoon or two of flour to make the gravy thick, stirring to combine.
Step 09
Slowly add a cup of filtered mussel cooked water, creating a smooth sauce, add minced parsley.
Step 10
Place mussels in serving bowls. Pour the sauce over the mussels, and serve with crusty bread for sauce dipping!

Grilled Shrimp with Roasted Garlic

Step 01

Preheat oven to 200°C.
Step 02
Peel, devein and rinse the shrimps. Pat it dry and season with salt and pepper. Place the shrimps in the fridge until ready to grill.
Roasted garlic and cilantro sauce
Step 01
Trim the top of the garlic head off but leave the garlic intact. Drizzle a generous amount of olive oil and roast it for 15 minutes or until slightly tender and fragrant.
Step 02
Remove it from the oven and let it cool briefly. Peel and crush garlic as fine as possible.
Step 03
To prepare the sauce, combine the roasted garlic with cilantro, lime juice, white wine, olive oil, and chili sauce. Whisk together and set aside.
Step 04
When ready, lightly oil the cast iron or grill to medium high heat. Coat the shrimps with olive oil and grill for 3-4 minutes on each side. Char the shrimps but be careful not to overcook it.
Step 05
Remove it from the grill to a bowl and dress it well with the roasted garlic and cilantro sauce.
Step 06
Serve shrimps with pasta or rice.

Alternatively, you can even serve it with your favourite crusty bread.
