Classic Guacamole

Step 01

Scoop avocado into a bowl, mash with fork until you have smooth or chunky texture.
Step 02
Add lime juice, jalapeño, onion, garlic, coriander leaves and salt

Mix all ingredients together.

Fun fact: Guacamole (originally ahuaca-mulli) is Aztec for “Avocado Sauce”, the original recipe calling for crushed avocado, tomatoes and salt.

Step 01

Heat flat pan

Halve and pit the avocados. Drizzle olive oil and lemon juice and season it with salt and pepper.
Step 03
Place the avocado halves, cut side down, on the pan and cook for about 5 minutes or until crispy golden brown.
Step 04
Scoop it out, and mash it gently with a fork.
Step 05
Stir in the olive oil, lemon zest, garlic, basil and parmesan.

Tips: Turn this guacamole into an avocado crema by blending it with sour cream and buttermilk.

Step 01

Combine all 5 ingredients in a medium bowl. Stir to combine.
Step 02
Place in the refrigerator for 15-30 minutes so they are easier to roll.
Step 03
Roll into 12 balls and store in the fridge for up to a week.

Pineapple Square Tarts

Step 01

Place pineapple in food processor and blitz until it is pureed.
Step 02
Stop and scrape the sides of the bowl occasionally.
Step 03
Cook it until the liquid has evaporated.
Step 04
Reduce the heat. Add sugar, cook until it thickens.
Step 05
Add in the maltose sugar. Cook for 12 minutes.
Step 06
Transfer mixture to a shallow bowl and refrigerate until cool.
Step 07
Cream butter, icing sugar and shortening for approximately 10 minutes.
Step 08
Add in the egg and essence, as the whisk is running.
Step 09
Remove from whisk and fold in the flour, corn flour and milk powder. Place the dough in the refrigerator for 15 minutes.
Step 10
Divide dough into approximately 20-30 pieces and flatten each.
Step 11
Place a teaspoon of the pineapple filling in the center of the dough.
Step 12
Press into square mold and bake it at 180℃ for 20 minutes.
Step 13
Turn it around to bake for another 10 minutes, or until it browns.

Fun fact: Pineapple sounds like “prosperity arrives” in several Chinese dialects hence pineapple tarts are considered ‘good luck food’ in Chinese culture.

To remove the beet’s red stain, scrub your cutting board with hot, soapy water immediately after you finish cutting it.

Step 01

Prepare a cupcake tin with 6 liners.

Stir peanut butter and powdered sugar together until smooth.

Spread 1 to 2 tablespoons of chocolate in the bottom of each cupcake liner.

Dollop 1 to 2 teaspoons of the peanut butter mixture on top of the chocolate.

Step 01

Preheat oven to 250°C. Line a baking sheet with aluminium foil and non-stick spray.
Step 02
In a large bowl, combine panko and parmesan cheese.
Step 03
Season with salt and pepper, and set it aside.
Step 04
Working in batches, coat asparagus in flour, then dip into eggs and finally into the panko mixture.
Step 05
Place asparagus onto baking sheet and bake for 10-12 minutes or until golden brown.
Step 06
Serve immediately.

For a non-vegetarian version, top the roasted asparagus with an over-easy or poached egg and sprinkle with prosciutto bits.

Sweet Potato Fritters

Step 01

Squeeze any excess juice from the grated sweet potato and place in a bowl.
Step 02
Add eggs, paprika, salt and pepper. Mix to combine.

Melt some butter in a frying pan.
Step 04
Carefully mould 1/4 cup of fritter batter into a patty shape before frying. Repeat with the rest of the batter.
Step 05
Cook for 5 minutes, flip and cook for another 5 minutes.

Pair this with sautéed greens to add some colour to your meal!

Freshly grated coconut

Coconut Candy

Step 01

Place all ingredients except desiccated coconut in a pan. Stir well and cook over very slow fire until the sugar is dissolved and mixture is boiling.
Step 02
Stir constantly with long wooden spoon to prevent from burning.
Step 03
Once the mixture is thicker, use a smaller flame.
Step 04
Cook until lumps are formed, and sides are crystallized around the mouth of the pan.
Step 05
Stir well and add butter.
Step 06
When mixture is slightly cooled, spread out using a wooden spoon.
Step 07
Place onto palm to make rounded balls. Then, roll onto desiccated coconut for the outer layer.

You can also add in food colouring and flavouring of your choice!
